Mix Vegetable Raita |Mixed Raita

Mix Vegetable Raita is a classic Indian mixed raita made with yogurt, fresh raw vegetables, and mild spices. This flavorful and refreshing veg raita is a delicious accompaniment that pairs well with all curries, biryanis, pulaos, and parathas.

Ingredients

  • 1 ½ cup yogurt
  • 1 cucumber
  • ½ carrot
  • ¼ onion
  • cilantro
  • 1 teaspoon Raita masala / Cumin powder
  • 1 teaspoon salt
  • dried mint leaves

Instructions

Prepare the vegetables

  1. Wash all the vegetables thoroughly. Grate the cucumber and carrot. Finely chop the onion and cilantro.
Prepare the raita base
  1. Whisk the yogurt until smooth. Add salt and raita masala or cumin powder, then whisk again to combine.
Assembly
  1. Add all the prepared vegetables to the yogurt and stir well.
  2. Garnish with dried mint leaves. Serve chilled for the best flavor.

Notes

  • Whisk the yogurt thoroughly before mixing in the vegetables.
  • For extra heat, add red or green chilies.
  • Adjust the amount of vegetables to your taste.
