Mixed Berry Cobbler
Cozy, warm, and satisfying, my berry cobbler is pure joy. Serve it with a scoop of vanilla ice cream or a dollop of whipped cream.

Ingredients
- 1 tablespoon orange zest
- 1/2 cup honey
- 2 tablespoons cornstarch
- 6 cups frozen mixed berries about two 10-oz bags (do not thaw!)
Topping:
- 2/3 cup quick oats
- 2/3 cup all-purpose flour
- 2/3 cup coconut sugar
- 1/4 teaspoon kosher salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup coconut oil melted
- vanilla yogurt ice cream optional, for serving
Instructions
- Preheat the oven to 350°F.

To make the filling:
- In a large bowl, add 1 tablespoon orange zest, 1/2 cup honey, and 2 tablespoons cornstarch and whisk until combined. Stir in the 6 cups frozen mixed berries. It will be difficult to mix well because the honey will quickly harden in contact with the frozen berries. That's ok; we will mix it well later on.
- Transfer to the baking dish and bake for 12-15 minutes.

Meanwhile, make the topping:
- Combine all the topping ingredients in a mixing bowl (2/3 cup quick oats, 2/3 cup all-purpose flour, 2/3 cup coconut sugar, 1/4 teaspoon kosher salt, 1/2 teaspoon ground cinnamon, and 1/2 cup coconut oil) With your clean hands, mix thoroughly between your fingers to create a texture similar to wet sand.
- Remove the dish from the oven, stir the berry mix well, then sprinkle the topping over.
- Return to the oven and bake for 35-40 minutes, or until the top is golden and the berry sauce is bubbly.
- Serve with vanilla yogurt ice cream or yogurt. Enjoy.
Notes
- Serve warm with froyo or vanilla ice cream, if desired.
- You may use any other frozen fruits of your choice.
- Store leftovers in the fridge for up to 4 days.
- Serve warm or cold.
