Mixed Berry Cobbler

Cozy, warm, and satisfying, my berry cobbler is pure joy. Serve it with a scoop of vanilla ice cream or a dollop of whipped cream.

Ingredients

  • 1 tablespoon orange zest
  • 1/2 cup honey
  • 2 tablespoons cornstarch
  • 6 cups frozen mixed berries about two 10-oz bags (do not thaw!)

Topping:

  • 2/3 cup quick oats
  • 2/3 cup all-purpose flour
  • 2/3 cup coconut sugar
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup coconut oil melted
  • vanilla yogurt ice cream optional, for serving

Instructions

  1. Preheat the oven to 350°F.

To make the filling:

  1. In a large bowl, add 1 tablespoon orange zest, 1/2 cup honey, and 2 tablespoons cornstarch and whisk until combined. Stir in the 6 cups frozen mixed berries. It will be difficult to mix well because the honey will quickly harden in contact with the frozen berries. That's ok; we will mix it well later on.
  2. Transfer to the baking dish and bake for 12-15 minutes.

Meanwhile, make the topping:

  1. Combine all the topping ingredients in a mixing bowl (2/3 cup quick oats, 2/3 cup all-purpose flour, 2/3 cup coconut sugar, 1/4 teaspoon kosher salt, 1/2 teaspoon ground cinnamon, and 1/2 cup coconut oil) With your clean hands, mix thoroughly between your fingers to create a texture similar to wet sand.
  2. Remove the dish from the oven, stir the berry mix well, then sprinkle the topping over.
  3. Return to the oven and bake for 35-40 minutes, or until the top is golden and the berry sauce is bubbly.
  4. Serve with vanilla yogurt ice cream or yogurt. Enjoy.

Notes

  • Serve warm with froyo or vanilla ice cream, if desired.
  • You may use any other frozen fruits of your choice.
  • Store leftovers in the fridge for up to 4 days.
  • Serve warm or cold.
