Mixed Fruit Cobbler

Mixed fruit cobbler is the perfect dessert for any time of year! Easy to make and even easier to eat. Soft crust with lots of fruit underneath.

Ingredients

  • 3 ½ cups mixed berries see note
  • ½ cup water
  • 2 cups sugar divided
  • ½ cup butter one stick
  • 1 ½ cups flour
  • 2 ¼ teaspoons baking powder
  • 1 teaspoon salt
  • 1 ½ cups milk

Instructions

  1. Preheat oven to 350ºF.
  2. Place the butter in the baking dish you'll be using and then put it in the oven until the butter has melted. You can use any standard 3 quart baking dish, usually, these dishes measure about 9x13 inches but a little variation is fine.
  3. Combine the fruit with 1 cup sugar and water in a saucepan on the stove. Bring the mixture to a boil and then simmer for about 10 minutes until it’s thickened and syrupy.
  4. Mix remaining sugar, flour, baking powder, and salt. Gradually stir in milk.
  5. Remove baking dish(es) from oven. Make sure butter is spread evenly on bottom of dish.
  6. Pour in batter, DO NOT MIX!
  7. Spoon fruit mixture evenly over the top and again, DO NOT MIX!
  8. Bake large dish for 40-45 minutes, or until the top crust is golden brown and the edges are bubbly.

Notes

  • Use any fruit you have or whatever is in season! Fresh or frozen, mixed or one kind. It's all up to you!
