M&M Cookie Bars

M&M Cookie Bars are a rich and chewy treat combining a classic cookie dough base loaded with colorful M&M's and semi-sweet chocolate chips. These bars bake with a lightly browned top and edges set, sprinkled with flaky sea salt to highlight the sweetness. The contrast of crisp edges and tender centers plus bursts of chocolate and candy pieces makes them ideal for sharing or a fun dessert option.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon kosher salt
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter at room temperature
  • 1 1/4 cups light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 egg large
  • 1 tablespoon vanilla extract pure
  • 1 1/4 cups M&M’s divided
  • 3/4 cup chocolate chips semi-sweet
  • sea salt for sprinkling on bars, flaky

Instructions

  1. Preheat oven to 350 degrees F. Line a 9×13-inch baking pan with parchment paper and lightly grease. Set aside.
  2. In a small bowl, whisk together flour, cornstarch, salt, baking soda, and baking powder. Set aside.
  3. In the bowl of a stand mixer, cream together butter, brown sugar and granulated sugar until well combined. Scrape down the sides of the bowl with a spatula, as necessary.
  4. Add the eggs and vanilla and beat until combined.
  5. With the mixer off, add the dry ingredients. Mix on low until all the ingredients are justs combined. Don’t over mix.
  6. Stir in 1 cup of M&M’s and the chocolate chips.
  7. Press the cookie dough into the bottom of the prepared pan. Top with the remaining 1/4 cup of M&M’s. Sprinkle with flaky sea salt.
  8. Bake for 20 to 24 minutes, or until the edges are set, and the top is just lightly browned.
  9. Remove pan from oven and place on a wire cooling rack. Let the bars cool in the pan for until completely cooled before cutting. Use the parchment paper to lift the cookie bars out of the pan, then cut into squares and serve.
