Mocha Waffles

Ingredients

  • 8 tablespoons 1 stick melted unsalted butter
  • 2 tablespoons instant coffee or espresso
  • 2 cups all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 cup white sugar
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 large eggs separated
  • 2 cups milk

  1. Coffee Butter: Melt 1 stick of butter in the microwave in 10 second increments. Add 2 tbsp of instant coffee. Mix until the instant coffee has dissolved completely.
  2. Separate 3 eggs. Then beat egg whites until medium-stiff peaks but not dry. It took about 3-4 minutes with an electric beater. The egg white peaks should point straight up without collapsing (mostly).
  3. Combine the dry ingredients: In a large bowl, sift together the flour, cocoa, sugar, baking soda, baking powder, and salt.
  4. Mix together wet ingredients: In a separate bowl, whisk together egg yolks, milk, melted coffee butter
  5. Pour into dry mixture, and combine.
  6. Fold in egg whites: Carefully fold whites into batter. Do not over-mix or your egg whites will lose their stiffness.
  7. Prepare waffle maker: Heat the waffle maker. Then grease waffle iron with some melted butter or oil
  8. Pour about 1/3 cup of batter per waffle (or adjust for your waffle iron) and spread evenly on the griddle.
  9. Close lid and cook for about 5 minutes (or adjust for your waffle iron). It's done when the waffle maker stops steaming.
  10. Repeat until you've gone through all the batter.
  11. Top with your choice of toppings. Enjoy!
