Ingredients

Bread
  • 1 cup (200g) granulated sugar + extra for sprinkling on top
  • ½ cup (120ml) milk
  • ½ cup (120ml) vegetable oil
  • ½ cup (120ml) sour cream
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups (282g) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups strawberries, washed, hulled, and chopped
Glaze
  • ½ cup (60g) powdered sugar
  • 1 tablespoon heavy cream
  • ½ teaspoon pure vanilla extract

Instructions

  1. Preheat oven to 350 degrees F. Line a 9x5-inch loaf pan with a parchment paper sling or spray with baking spray.
  2. Combine sugar, milk, vegetable oil, sour cream, egg, and vanilla extract in a large mixing bowl. Whisk well to combine.
  3. Add flour, baking powder, baking soda, and salt. Stir just until almost combined and only a few streaks of flour remain.
  4. Toss chopped strawberries with 2 tablespoons of flour, then add to the batter. Gently fold in the strawberries.
  5. Transfer the batter to the prepared loaf pan. Bake for 55-65 minutes until nicely browned on top and a toothpick inserted into the center of the bread comes out clean. Cool completely before adding glaze.
  6. Whisk glaze ingredients together in a small bowl, then drizzle over the cooled loaf. Let set before slicing and serving.
