Ingredients
Bread
- 1 cup (200g) granulated sugar + extra for sprinkling on top
- ½ cup (120ml) milk
- ½ cup (120ml) vegetable oil
- ½ cup (120ml) sour cream
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups (282g) all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 2 cups strawberries, washed, hulled, and chopped
Glaze
- ½ cup (60g) powdered sugar
- 1 tablespoon heavy cream
- ½ teaspoon pure vanilla extract
Instructions
- Preheat oven to 350 degrees F. Line a 9x5-inch loaf pan with a parchment paper sling or spray with baking spray.
- Combine sugar, milk, vegetable oil, sour cream, egg, and vanilla extract in a large mixing bowl. Whisk well to combine.
- Add flour, baking powder, baking soda, and salt. Stir just until almost combined and only a few streaks of flour remain.
- Toss chopped strawberries with 2 tablespoons of flour, then add to the batter. Gently fold in the strawberries.
- Transfer the batter to the prepared loaf pan. Bake for 55-65 minutes until nicely browned on top and a toothpick inserted into the center of the bread comes out clean. Cool completely before adding glaze.
- Whisk glaze ingredients together in a small bowl, then drizzle over the cooled loaf. Let set before slicing and serving.
