Mojitos Pitcher Recipe
This Mojitos Pitcher recipe creates a refreshing cocktail by combining a homemade mint simple syrup with white rum and fresh lime juice. The drink is lightened with club soda and served over ice, making it ideal for serving a group. The mint simple syrup is infused by steeping fresh mint leaves in hot syrup, which imparts a minty sweetness without muddling.
Ingredients
For the Mint Simple Syrup –
- 1 cup water
- 1 cup granulated sugar
- 1 cup mint leaf fresh
For the Pitcher of Mojitos –
- 2 cups white rum
- 1 ½ cups mint simple syrup
- 1 ¼ cups lime juice fresh
- 2 cups club soda
- ice
Garnishes: additional mint leaves and sliced limes
Instructions
For the Mint Simple Syrup:
- Set a small saucepot over high heat. Add the water and sugar to the pot. Stir and bring to a boil. Once boiling, stir, then remove from heat. Add the mint leaves and allow the simple syrup to steep and cool for 30 minutes. You can choose to leave-in or strain-out out the mint leaves. I like to keep them in because they have a softer texture than fresh mint leaves. No muddling required!
To Make a Pitcher of Mojitos:
- Set out a large pitcher. Pour in the rum, mint simple syrup, and lime juice. Stir to combine.
- When ready to serve, stir in the club soda and fill the pitcher with ice.
- Garnish glasses with fresh mint leaves and lime rounds or wedges. Pour the mojito into glasses and serve.
Notes
- Replace white rum with vodka for a different but still refreshing mojito variation.
- For a non-alcoholic version, use sparkling soda, ginger ale, or extra club soda instead of rum.
- Add fresh sliced strawberries or coconut cream to the pitcher to introduce a fruity or creamy twist.
