Monster Cookie Dough Cupcakes
Chocolate Chip Peanut Butter Cupcakes topped with Monster Cream Cheese Cookie Dough Frosting! Full of M&Ms, peanut butter, brown sugar, oats and chocolate chips. Heaven in a bite!
Ingredients
Cupcakes:
- 1/4 cup butter , softened
- 1/2 cup peanut butter creamy
- 1 cup sugar
- 2 egg whole
- 1 Tablespoon vanilla extract
- 1 1/2 cups flour
- 1 1/4 teaspoon baking powder
- 1/3 cup milk
- 1/4 cup milk chocolate chips
- 1/4 cup peanut chopped
Cookie Dough Frosting:
- 8 oz cream cheese , softened
- 1/2 cup butter , softened
- 1/2 cup peanut butter creamy
- 1 1/2 cups powdered sugar
- 3 Tablespoons brown sugar
- 3 Tablespoons all-purpose flour
- 2 teaspoons vanilla
- 1 cup oats
- 1 bag mini M&Ms plain
- 1 cup semi-sweet chocolate chip mini or regular size
Instructions
- Preheat oven to 350º.
- Using a stand mixer, whisk together butter and sugar until light, about 3 minutes.
- Add in peanut butter, mix to combine.
- Add eggs, vanilla and milk until well mixed.
- Mix in flour and baking powder until just combined.
- Add in chocolate chips and peanuts and mix for just a couple of seconds until mixed in.
- Using a 1/4 cup ice cream scoop or other measure, scoop batter into cupcake liners.
- Bake for 20 minutes or until toothpick inserted comes out clean. Let cool on a wire rack.
- For the frosting, use a stand mixer to cream the butter, cream cheese and peanut butter together. Add in the brown sugar, vanilla, oats and flour.
- Add in the powdered sugar, until well mixed.
- Finally add the M&Ms and Chocolate chips, until just combined.
- Using your 1/4 cup ice cream scoop, scoop out the cookie dough onto the cooled cupcakes.
