Monster Cookie Dough Cupcakes

Chocolate Chip Peanut Butter Cupcakes topped with Monster Cream Cheese Cookie Dough Frosting! Full of M&Ms, peanut butter, brown sugar, oats and chocolate chips. Heaven in a bite!

Ingredients

Cupcakes:

  • 1/4 cup butter , softened
  • 1/2 cup peanut butter creamy
  • 1 cup sugar
  • 2 egg whole
  • 1 Tablespoon vanilla extract
  • 1 1/2 cups flour
  • 1 1/4 teaspoon baking powder
  • 1/3 cup milk
  • 1/4 cup milk chocolate chips
  • 1/4 cup peanut chopped

Cookie Dough Frosting:

  • 8 oz cream cheese , softened
  • 1/2 cup butter , softened
  • 1/2 cup peanut butter creamy
  • 1 1/2 cups powdered sugar
  • 3 Tablespoons brown sugar
  • 3 Tablespoons all-purpose flour
  • 2 teaspoons vanilla
  • 1 cup oats
  • 1 bag mini M&Ms plain
  • 1 cup semi-sweet chocolate chip mini or regular size

Instructions

  1. Preheat oven to 350º.
  2. Using a stand mixer, whisk together butter and sugar until light, about 3 minutes.
  3. Add in peanut butter, mix to combine.
  4. Add eggs, vanilla and milk until well mixed.
  5. Mix in flour and baking powder until just combined.
  6. Add in chocolate chips and peanuts and mix for just a couple of seconds until mixed in.
  7. Using a 1/4 cup ice cream scoop or other measure, scoop batter into cupcake liners.
  8. Bake for 20 minutes or until toothpick inserted comes out clean. Let cool on a wire rack.
  9. For the frosting, use a stand mixer to cream the butter, cream cheese and peanut butter together. Add in the brown sugar, vanilla, oats and flour.
  10. Add in the powdered sugar, until well mixed.
  11. Finally add the M&Ms and Chocolate chips, until just combined.
  12. Using your 1/4 cup ice cream scoop, scoop out the cookie dough onto the cooled cupcakes.
