Monster Halloween Brookies

Ingredients

Brownies:
  • 2 boxes Brownies Mix 18.3 oz
  • Additional ingredients listed on the Brownie boxes
Cookie Dough:
  • ⅔ cup peanut butter creamy
  • 4 Tbsp butter unsalted, room temp
  • ½ cup light brown sugar
  • 4 Tbsp white sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • ⅔ cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp kosher salt
  • ½ cup quick oats
  • ½ cup chocolate chips miniature
  • 1 cup Halloween sprinkles
  • 1 package Candy eyes
Vanilla frosting
  • ½ cup butter unsalted, softened
  • 2 cup powdered sugar
  • 2 tsp pure vanilla extract
  • 2 tbsp heavy whipping cream
  • Gel food coloring Neon Green

Instructions

  1. Preheat the oven to 350 degrees,
  2. Prep 9 X 13-inch baking pan with nonstick baking spray.
  3. Line the baking pan with parchment paper with extra on the four sides.
Brownies:
  1. Follow the ingredient list and baking directions listed on the back of the boxes.
  2. Put the batter in the prepared baking pan.
  3. Set aside.
Cookie Dough:
  1. Add the peanut butter and soft butter to a mixing bowl.
  2. Use the paddle attachment of the electric mixer to combine.
  3. Add the brown sugar, white sugar, eggs, and vanilla.
  4. Beat until completely mixed.
  5. In a second bowl add flour, baking soda, and salt.
  6. Whisk to blend.
  7. Add the oats and chocolate chips.
  8. Beat to blend all ingredients together.
  9. Use a serving spoon to drop the oatmeal mixture over the brownie batter.
  10. Sprinkle the Halloween sprinkles over the top.
  11. Bake at 350 degrees for 25 minutes.
  12. Insert a toothpick in the center to see if it is done.
  13. When done, set on a counter for at least 30 minutes to cool.
  14. Remove from the baking pan.
Frosting
  1. Using a standing mixer, beat the butter, powdered sugar, vanilla, and heavy whipping cream with paddle attachment until combined, creamy and stiff
  2. Beat in a few drops of neon green food coloring and mix until blended
  3. Scoop the frosting into the piping bag
  4. Pipe big and small dollops on the brownies
  5. Place two mini candy eyes in the frosting
  6. Allow frosting to firm up before enjoying
