Spinach Monster Muffins are a fun and healthy twist on the classic Halloween treat. These green spinach muffins are perfect for picky eaters and provide a nutritious option for your little monsters during the spookiest time of the year.

Ingredients

  • 3 cups spinach
  • 1 cup milk
  • 2 eggs
  • 1 avocado
  • 2 TBS butter melted
  • 2 cups flour
  • ½ cup brown sugar
  • 3 tsp baking soda
  • 1 tsp salt
  • ½ cup chocolate chips
  • Candy eyes

Instructions

  1. Preheat oven to 375 degrees F. Add cupcake liners to two 12 serving cupcake pans and set aside.
  2. In a large mixing bowl whisk together flour, brown sugar, baking soda, and salt.
  3. In a food processor, blend spinach, milk, egg, avocado, and butter until well combined, about 5 minutes.
  4. Pour spinach mixture into flour, mix until well combined.
  5. Fold chocolate chips into mixture.
  6. Pour ¼ cup of batter into cupcake liners.
  7. Sprinkle with chocolate chips and edible googly eyes.
  8. Bake for 15-18 minutes, until the tops are no longer soft.
