Spinach Monster Muffins are a fun and healthy twist on the classic Halloween treat. These green spinach muffins are perfect for picky eaters and provide a nutritious option for your little monsters during the spookiest time of the year.

Ingredients
- 3 cups spinach
- 1 cup milk
- 2 eggs
- 1 avocado
- 2 TBS butter melted
- 2 cups flour
- ½ cup brown sugar
- 3 tsp baking soda
- 1 tsp salt
- ½ cup chocolate chips
- Candy eyes
Instructions
- Preheat oven to 375 degrees F. Add cupcake liners to two 12 serving cupcake pans and set aside.
- In a large mixing bowl whisk together flour, brown sugar, baking soda, and salt.
- In a food processor, blend spinach, milk, egg, avocado, and butter until well combined, about 5 minutes.
- Pour spinach mixture into flour, mix until well combined.
- Fold chocolate chips into mixture.
- Pour ¼ cup of batter into cupcake liners.
- Sprinkle with chocolate chips and edible googly eyes.
- Bake for 15-18 minutes, until the tops are no longer soft.
