Ingredients

  • 2 ½ cups old-fashioned oats
  • 1 cup peanut butter creamy or crunchy
  • 1 scoop collagen or vanilla protein powder
  • ½ cup agave syrup or honey
  • ½ cup mini chocolate chips
  • ⅓ cup Mini M&Ms

Instructions

    Cup of Yum
  1. Place all of the ingredients in a large mixing bowl and stir together using a spatula or wooden spoon until the ingredients are fully combined.
  2. Line a baking sheet with parchment paper.
  3. Use a medium cookie scoop to scoop dough and place the monster cookie dough onto the prepared baking sheet. Place the baking sheet in the fridge to chill for 2 hours.
  4. Remove the baking sheet from the fridge and carefully roll each scoop of cookie dough into a ball.
  5. Serve immediately or place the monster cookie energy balls into an airtight container and back into the fridge to enjoy later!

Notes

  • Cover and store. Store at room temperature or in the refrigerator for up to 1 week.
  • Avoid using natural peanut butter. It won’t provide the same chewy, moist consistency you want. It’ll dry the monster protein balls out and make them crumbly.
  • Try a different nut butter. If you have a peanut allergy, try another kind of nut butter, think about cashew butter, almond butter, sunflower seed butter, or pumpkin seed butter.
  • I do recommend keeping them in the fridge, despite them being good at room temperature. They are much tastier when eaten cold!
  • Prevent stickiness. If you find the balls are sticky when trying to roll them, you can spray your hands with a little cooking spray.
