Ingredients
- 1 tablespoon olive oil
- 4 boneless skinless chicken breasts
- 1/2 /2 cup BBQ sauce (use sugar-free BBQ sauce if making Keto)
- 1 cup shredded Monterey Jack or cheddar cheese
- 4 pieces of bacon, cooked and crumbled
- 1/2 /2 cup diced tomatoes
- 2 tablespoons sliced green onions
Instructions
- Preheat oven to 400℉. Preheat a large oven safe skillet to medium-high heat and add the olive oil. While skillet is preheating, pound chicken breasts to flatten them if they are thick. Salt and pepper the chicken breasts.
- Add chicken to pan and cook 4-5 minutes per side or until no longer pink.
- Turn off the heat and pour BBQ sauce on each chicken breast evenly.
- Sprinkle the cheese evenly on the chicken breasts and top with the crumbled bacon.
- Bake the chicken for 2-3 minutes until cheese is melted.
- Top with bacon, diced tomatoes, and sliced green onions. Serve.
