Moroccan Fava Bean Dip with Harissa & Mint (Bessara)

My take on this classic Bessara, bean dip features the spiced heaven of Harissa and the fresh fragrance of mint. Perfect with breads!

Ingredients

  • 2 cans fava beans (12oz cans) (drained - retain liquid)
  • 1 lemon (juice of)
  • ½ cup mint leaves
  • ¼ cup extra virgin olive oil
  • 2 tbsp harissa paste
  • ½ tsp cumin
  • salt & pepper
Garnishes
  • ½ cup red onion (thinly sliced)
  • ½ lemon (juice of)
  • extra virgin olive oil
  • paprika
  • fresh mint
  • black pepper

Instructions

    Cup of Yum
  1. Place all ingredients into a food processor with about ½ cup of the fava bean liquid. Blend into a smooth paste.
  2. Toss the red onion with the lemon juice and set aside.Spead out the dip on a platter or shallow bowl then scatter over the onion. Sprinkle with mint, black pepper, paprika and black pepper. Finally, drizzle over more extra virgin olive oil.
  3. Serve with breads to dip and scoop.
