Moroccan Fava Bean Dip with Harissa & Mint (Bessara)

My take on this classic Bessara, bean dip features the spiced heaven of Harissa and the fresh fragrance of mint. Perfect with breads!

Ingredients
- 2 cans fava beans (12oz cans) (drained - retain liquid)
- 1 lemon (juice of)
- ½ cup mint leaves
- ¼ cup extra virgin olive oil
- 2 tbsp harissa paste
- ½ tsp cumin
- salt & pepper
Garnishes
- ½ cup red onion (thinly sliced)
- ½ lemon (juice of)
- extra virgin olive oil
- paprika
- fresh mint
- black pepper

Instructions
- Place all ingredients into a food processor with about ½ cup of the fava bean liquid. Blend into a smooth paste.
- Toss the red onion with the lemon juice and set aside.Spead out the dip on a platter or shallow bowl then scatter over the onion. Sprinkle with mint, black pepper, paprika and black pepper. Finally, drizzle over more extra virgin olive oil.
- Serve with breads to dip and scoop.
