Mummy Cookies

Bring in this spooky season with these creepy, but slightly adorable Mummy Cookies. These are maple cinnamon cookies topped with vanilla frosting and candy eyes.

Ingredients

  • 3 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp kosher salt
  • 1 cup butter unsalted, melted
  • 1 ½ cup light brown sugar packed
  • ⅓ cup maple syrup
  • 1 tsp pure vanilla extract
  • 1 large egg
Vanilla Frosting
  • 1 cup butter unsalted, softened
  • 2 ½ - 3 cup powdered sugar
  • 2 tsp pure vanilla extract
  • 4 Tbsp heavy whipping cream
  • 20 edible icing eyes

Instructions

  1. Whisk flour, baking powder, baking soda, cinnamon, and salt together in a large bowl.
  2. Set aside.Put butter in a heat proof bowl.
  3. Place in the microwave until the butter has melted.
  4. Set aside the butter to cool slightly.
  5. Add brown sugar, maple syrup, and vanilla extract to the melted butter.
  6. Stir well to mix.
  7. Stir in the egg until all ingredients have been combined.
  8. Add the flour mixture to the butter mixture.
  9. Mix the ingredients together using a hand mixer until just mixed.
  10. Cover the mixing bowl with plastic wrap.
  11. Put in the refrigerator to chill for 30 minutes.
  12. Preheat the oven to 375 degrees.
  13. Line the baking sheet with a silicone mat.
  14. With a large cookie, scoop and make cookie balls.
  15. Position the cookie balls on the prepared baking sheet.
  16. Space them 2 inches apart.
  17. Put the remaining cookie balls back in the bowl, cover them, and return them to the refrigerator.
  18. Bake only one tray of cookies at a time.
  19. Bake at 375 degrees for 10-12 minutes.
  20. The cookies will puff up a little bit.
  21. You want the edges of the cookies just a slight beige.
  22. Set the cookie sheet aside to let the cookies cool for 5 minutes.
  23. Move the cookies to a cooling rack to cool completely.
Frosting Directions
  1. Using a standing mixer, beat the butter, powdered sugar, vanilla, and heavy whipping cream until creamy and stiff
  2. Scoop the frosting into the piping bag
  3. Make sure the ridged side of the tip is facing downwards
  4. Pipe thick lines randomly over the cookie making sure to leave the middle space bare for the eyes
  5. Pipe a small amount on the back of two eyes and place it in the middle of the cookies
  6. Allow the frosting to firm up before enjoying
