Bring in this spooky season with these creepy, but slightly adorable Mummy Cookies. These are maple cinnamon cookies topped with vanilla frosting and candy eyes.

Ingredients
- 3 cup all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- ½ tsp kosher salt
- 1 cup butter unsalted, melted
- 1 ½ cup light brown sugar packed
- ⅓ cup maple syrup
- 1 tsp pure vanilla extract
- 1 large egg
Vanilla Frosting
- 1 cup butter unsalted, softened
- 2 ½ - 3 cup powdered sugar
- 2 tsp pure vanilla extract
- 4 Tbsp heavy whipping cream
- 20 edible icing eyes
Instructions
- Whisk flour, baking powder, baking soda, cinnamon, and salt together in a large bowl.
- Set aside.Put butter in a heat proof bowl.
- Place in the microwave until the butter has melted.
- Set aside the butter to cool slightly.
- Add brown sugar, maple syrup, and vanilla extract to the melted butter.
- Stir well to mix.
- Stir in the egg until all ingredients have been combined.
- Add the flour mixture to the butter mixture.
- Mix the ingredients together using a hand mixer until just mixed.
- Cover the mixing bowl with plastic wrap.
- Put in the refrigerator to chill for 30 minutes.
- Preheat the oven to 375 degrees.
- Line the baking sheet with a silicone mat.
- With a large cookie, scoop and make cookie balls.
- Position the cookie balls on the prepared baking sheet.
- Space them 2 inches apart.
- Put the remaining cookie balls back in the bowl, cover them, and return them to the refrigerator.
- Bake only one tray of cookies at a time.
- Bake at 375 degrees for 10-12 minutes.
- The cookies will puff up a little bit.
- You want the edges of the cookies just a slight beige.
- Set the cookie sheet aside to let the cookies cool for 5 minutes.
- Move the cookies to a cooling rack to cool completely.
Frosting Directions
- Using a standing mixer, beat the butter, powdered sugar, vanilla, and heavy whipping cream until creamy and stiff
- Scoop the frosting into the piping bag
- Make sure the ridged side of the tip is facing downwards
- Pipe thick lines randomly over the cookie making sure to leave the middle space bare for the eyes
- Pipe a small amount on the back of two eyes and place it in the middle of the cookies
- Allow the frosting to firm up before enjoying
