Mushroom Masala

Mushroom Masala is a spiced curry featuring mushrooms simmered in a thick onion, tomato, and cashew nut paste. The use of whole warming spices like cloves, cardamoms, cinnamon, and bay leaves provides a deep aromatic background. This recipe results in a richly flavored curry with a thick gravy, ideal for serving with rice. The moderate use of chili powder and garam masala brings gentle heat without overpowering the earthy mushrooms.
