Mushroom Masala
Description
Mushroom Masala combines mushrooms with a smooth paste made from onion, tomatoes, cashew nuts, garlic, and ginger. Whole spices such as cloves, green and black cardamom, cinnamon, and bay leaves are tempered in olive oil to release fragrance before adding the paste. The curry simmers until thickened, then finished with chili powder and garam masala to develop complexity and a rich color. Mushrooms are added last with a little water to cook through without excess liquid, preserving the gravy's consistency.
The curry offers a balanced texture: tender mushrooms in a thick, spiced sauce. Its warmth and richness make it well-suited to accompany plain rice or flatbread. The ingredients provide a particular focus on traditional aromatic Indian spices and the creaminess from cashews without dairy.
To ensure a thick masala, only the specified amount of water is added as mushrooms release moisture during cooking. Clean mushrooms thoroughly before use to avoid grit. Cashews can be substituted with almonds if preferred. The curry's flavor can be modified with mild chili powder for a moderate heat level to suit different palates.
Ingredients
- 1 onion peeled and roughly chopped
- 2 tbsp cashew nuts raw
- 100 g tomato chopped
- 1 clove garlic peeled
- 2.5 cm ginger peeled, piece
- 2 tbsp olive oil
- 4 cloves
- 2 green cardamom pods split
- 1 black cardamom pod
- 1 cinnamon stick
- 2 bay leaf
- 0.5 tsp chilli powder mild
- 1 tsp garam masala
- 250 g mushroom slices
- 125 ml water
- salt to taste
Instructions
Make Your Mushroom Curry (Mushroom Masala)
- Add the onion, cashew nuts, tomatoes, garlic clove, and ginger into a blender and blend into a smooth paste and set aside
- Heat oil in a pan and fry the cloves, cardamoms, cinnamon and bay leaves for a min till fragrant.
- Add onion-tomato paste, reduce to a simmer, cover and cook for 15 mins (stirring occasionally) until it is thickened.
- Add the remaining spices and cook for another 5 mins till darker and the oil starts floating.
- Add the mushrooms and water, bring to a simmer and simmer for a couple of mins until the mushrooms are cooked. Then just think up what to serve with your awesome mushroom curry recipe.
- Season with salt and serve with rice.
Notes
- Clean mushrooms thoroughly before cooking to remove dirt.
- Use only the specified amount of water to keep the gravy thick since mushrooms release moisture.
