Mustikkapiirakka – Finnish Blueberry Pie

This delicious blueberry treat is traditional in Finland.

Ingredients

  • 1 cup milk warmed, I used almond milk
  • ¼ oz or one package active dry yeast 2.25 tsp
  • ½ teaspoon salt
  • ⅔ cup sugar
  • 1 large egg
  • 3 cups all-purpose flour
  • ⅓ cup melted butter plus more for greasing the bowl
  • 4 cups blueberries
  • 3  tablespoon almond flour

Instructions

  1. Dissolve the yeast in the warm milk in the bowl of a mixer.
  2. Add salt, sugar, egg and half the flour.
  3. Mix on low speed using the dough hook attachment until smooth and combined.
  4. Add melted butter and remaining flour a little at a time, until the dough is smooth and still a little sticky, about 5 minutes.
  5. Put the dough into a greased bowl, cover and let rise in a warm place until doubled in size, about an hour.
  6. Preheat oven to 350°
  7. Toss berries with the almond flour.
  8. On a parchment-lined, 12" x 8" baking sheet press the dough out with floured hands to cover most of the pan, pinching a ridge all around.
  9. Spread blueberry mixture evenly over the dough.
  10. Bake in the center of the oven for about 30 minutes, or until the crust is golden brown.
  11. Serve warm or cold. Will keep covered, up to 3 days.
