Nam Sod Lettuce Wraps

Ingredients

  • 1 teaspoon peanut oil
  • 1 pound ground pork
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon fresh mint chopped
  • 2 teaspoons low sodium soy sauce
  • 1 tablespoon fish sauce
  • 2 tablespoon lime juice
  • 1/4 teaspoon crushed red pepper
  • 1 head butter lettuce leaves separated
  • 1 cup shredded carrot
  • 1 cup sliced red onion
  • 1 cup chopped green onions scallions
  • 1 cup chopped cilantro
  • 1 cup dry roasted peanuts
  • 1 cup sliced red bell pepper optional

Instructions

  1. Place a large skillet over medium heat. Add the oil, ground pork, garlic and ginger. Brown for 5 minutes, breaking into small pieces with a wooden spoon. Then add the mint, soy sauce, fish sauce, lime juice and crushed red pepper. Stir and cook another 3 minutes until the liquid absorbs.
  2. For lettuce wraps: Place a spoonful of the nam sod meat filling in lettuce leaves, then top with veggies and peanuts.
  3. For the salad: Arrange the lettuce leaves in 4 serving bowls, then divide the nam sod between the bowls and top with veggies and peanuts.
