Nigerian Style Beef Suya Skewers

Ingredients

  • 1 Pound steak Sliced. Flat iron, sirloin, or flank steak.
  • ¼ cup creamy peanut butter or Peanut Oil
Yaji Spice
  • 4 teaspoons ground peanuts
  • 2 teaspoons Powdered Bouillon Beef or Chicken
  • 1 teaspoon onion powder
  • 1 teaspoon ginger powder
  • 1 teaspoon sea salt more or less to taste
  • ½ teaspoon smoked paprika
  • ½ teaspoon crushed red pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon cayenne

Instructions

  1. Run the peanuts through a spicy grinder or use a mortar and pestle to crush the nuts into a fine powder. Combine the peanut powder with the remaining Yaji spice ingredients.
  2. Cut the steak into roughly 2x4 inch strips and skewer the slices of meat onto the skewers.
  3. Rub the meat with the peanut oil, or peanut butter.
  4. Generously season the meat skewers with the suya spice.
  5. Cover the meat and refrigerate for at least 2 hours, or overnight.
  6. Set up your grill for direct heat and preheat to 400 degrees. Make sure the grill grates are well oiled.
  7. Grill the suya beef skewers, flipping every 2 minutes. Cook to your desired temperature. Timing will vary but typically allow 6-8 minutes for medium rare.
  8. Serve the skewers while warm.
