No Bake Coconut Lime Cheesecake Bites

Ingredients

  • 30 mini Fillo shells 2 (15 count) boxes
  • 8 ounces cream cheese
  • 4 ounces sour cream
  • ¼ cup powdered sugar
  • 1 teaspoons vanilla bean paste
  • ½ cup toasted shredded sweetened coconut
  • 1 tablespoon lime zest

Instructions

  1. Preheat oven to 350 degrees F.
  2. Place phyllo shells on a baking sheet and bake for 5 minutes until lightly browned. Take out of the oven and let cool.
  3. In the bowl of an electric mixer add cream cheese, sour cream, powdered sugar, and vanilla bean paste. Blend on medium speed until smooth and combined.
  4. Add 1/4 cup toasted coconut and lime zest and mix until combined.
  5. Fill each phyllo cup with 1 tablespoon cheesecake mixture and top each bite with the remaining toasted coconut.
  6. Store in the refrigerator for up to 2 days.
