No chocolate AIP Paleo banana muffins from chufa tigernuts and carob
Muffins specially designed for the elimination phase of the AIP diet. Without grains, nuts, seeds or eggs. With carob as a substitute for cocoa.
Ingredients
- 1 banana
- ¼ cup Tigernut Flour firmly pressed (30 grams, ground chufa
- 2½ tablespoons carob powder
- 2 tablespoons coconut flower sugar
- 2 teaspoons baking powder corn and aluminum free
- 2 pinches sea salt Celtic variety
Instructions
- Preheat the oven to 360F or 180C.
- Mash the banana and mix all ingredients together.
- Fill the molds and place in the oven for 30 minutes.
Notes
- I prefer using both paper baking cups and a (ceramic) muffin tin and place the paper cups in the tin. This makes the cups stable when filling and easy to handle.
