No Drain Instant Pot Mashed Potatoes

Ingredients

  • 2 kg white potatoes
  • 240 ml vegetable stock
  • 1 Tbsp parsley
  • salt & pepper
  • 2 Tbsp Philadelphia cream cheese
  • 1 Tbsp Margarine/Butter

  • Potato masher

Instructions

  1. Peel and dice your potatoes into small to medium chunks.
  2. Load potatoes into your instant pot inner pot. Season well with salt and pepper and then add half the parsley. Add 240ml of vegetable stock.
  3. Place the lid on your instant pot pressure cooker, set the valve to sealing and cook for 8 minutes with a quick pressure release.
  4. After releasing pressure, the potatoes will be very soft and there will hardly be any liquid left as the potatoes will have soaked them up.
  5. Add butter or margarine along with cream cheese and season again and mash until creamy with a hand masher.
  6. Then load into a serving dish, ready for serving.

Notes

  • Quantities. I used 2 kilos (4.4lbs) of potatoes, but you can increase or decrease and keep the exact same cook time.
  • Butter. Because of the way the water soaks into the potatoes, no drain mash requires less butter than traditional mashed potatoes recipes. But you can add a little at a time and adjust to your taste.
  • Milk. You can mix and match favourite mashed potatoes ingredients. Just note that butter is to be added after cooking not before. And that you don’t need any milk.
