Nopalitos Tofu Scramble
The Nopalitos Tofu Scramble combines crumbled extra firm tofu with sautéed onions, mushrooms, and nopalitos (cactus paddles) seasoned with cumin and optional smoked paprika. This plant-based scramble results in a savory and textured dish with hints of earthiness and a gentle spice, making it a suitable vegan alternative to traditional egg scrambles.
Ingredients
- 1 tablespoon vegetable oil or ¼ cup of water/broth
- ½ onion diced, large, yellow or red
- 4 to 5 button mushrooms sliced, or white or shiitake mushrooms
- ½ cup nopalitos cactus - from a jar, sliced
- 3 garlic minced, cloves
- 1 ½ teaspoons ground cumin
- smoked paprika optional, pinch
- 1 extra firm tofu drained and pressed, 14-ounce package
- salt to taste
Instructions
- In a large pan or skillet over medium-high heat, heat the oil. Add the onion, mushrooms, nopalitos, and garlic, and saute for 3 to 4 minutes.
- Sprinkle in the cumin and smoked paprika.
- Using your fingers, crumble the tofu into the pan and saute for 3 to 4 minutes, or until the tofu is golden.
- Sprinkle in salt, if you’re using.
Notes
- Drain and rinse nopalitos before cooking to reduce briny flavor and slime.
- For a softer, wetter scramble, add a splash of dairy-free milk or cream.
- To add an egg-like flavor, include a small pinch of kala namak (black salt).
