Nopalitos Tofu Scramble
Description
This recipe sautés diced onion, sliced mushrooms, and nopalitos in oil or broth to soften and develop flavor before adding crumbled pressed tofu. The tofu absorbs the browned edges and added spices, particularly cumin and optional smoked paprika, to create a golden, seasoned scramble. Salt can be added to taste. The nopalitos add a slightly tangy and crisp texture contrasting with the soft tofu and vegetables.
Serve this scramble as a fulfilling vegan breakfast or light meal. It pairs well with toast or rice and can be adapted for moisture by adding a splash of plant-based milk or cream. Kala namak can be added as a seasoning to emulate an egg-like flavor.
Drain and rinse nopalitos to reduce brininess and sliminess before use. Adjust the seasoning to suit your taste preferences and add moisture if you prefer a softer consistency.
Ingredients
- 1 tablespoon vegetable oil or ¼ cup of water/broth
- ½ onion diced, large, yellow or red
- 4 to 5 button mushrooms sliced, or white or shiitake mushrooms
- ½ cup nopalitos cactus - from a jar, sliced
- 3 garlic minced, cloves
- 1 ½ teaspoons ground cumin
- smoked paprika optional, pinch
- 1 extra firm tofu drained and pressed, 14-ounce package
- salt to taste
Instructions
- In a large pan or skillet over medium-high heat, heat the oil. Add the onion, mushrooms, nopalitos, and garlic, and saute for 3 to 4 minutes.
- Sprinkle in the cumin and smoked paprika.
- Using your fingers, crumble the tofu into the pan and saute for 3 to 4 minutes, or until the tofu is golden.
- Sprinkle in salt, if you’re using.
Notes
- Drain and rinse nopalitos before cooking to reduce briny flavor and slime.
- For a softer, wetter scramble, add a splash of dairy-free milk or cream.
- To add an egg-like flavor, include a small pinch of kala namak (black salt).
