Nut Free Granola Bars Recipe

These nut free granola bars are made by blending dates, sunflower seed butter, and maple syrup into a sticky base combined with toasted rolled oats and desiccated coconut. Optional chocolate chips add sweetness. Firmly pressed and chilled, they hold together as energizing bars with chewy and crunchy textures.

Description

The Nut Free Granola Bars recipe begins by processing dates, sunflower seed butter, maple syrup, and a pinch of salt into a paste, forming the sticky foundation. Toasted rolled oats and coconut are then incorporated just enough to mix evenly before transferring the mixture into a lined pan. The granola is firmly pressed down to compact it. Adding chocolate chips on top before chilling in the fridge helps them bind and adds a touch of sweetness.

Chilling for 30 minutes allows the bars to set firmly so they can be cut into portions that combine chewy sweetness from the dates and seed butter with the toasty crunch of oats and coconut. These bars are filling and good for snacks or on-the-go energy.

For best flavor, toast oats and coconut at 350°F until golden and fragrant before mixing. The bars can be wrapped individually and stored refrigerated for a week or frozen for months.

Ingredients

  • ½ cup dates about 15 dates, packed, pitted
  • ½ cup sunflower seed butter sunflower seed butter
  • ¼ cup maple syrup
  • salt a pinch
  • 1 cup rolled oats toasted, see notes
  • 1 cup desiccated coconut toasted, see notes
  • chocolate chips we like Lily's no sugar added chocolate chips, optional, 2 tablespoons

Instructions

  1. Place the dates, Sunbutter, maple syrup, and salt into your food processor and pulse until a paste forms. 
  2. Add the oats and coconut pulse a few more times, just until it starts to mix. Transfer to a bowl and continue to mix until everything comes together. 
  3. Line a small baking dish (we use an 8"x 5" pan) with parchment paper. Place the granola bar batter into the pan and press it down firmly. The bottom of a measuring cup works well for this. If you're using the chocolate chips, sprinkle them on top and press them down. 
  4. Place the dish into your fridge for 30 mintues then cut into 12 bars. Wrap them each individually then store them in your fridge for 7 days or in your freezer for up to 3 months. 

Notes

  • Toast rolled oats and desiccated coconut at 350°F for about 8 minutes until golden for enhanced flavor.
  • Cut the bars into 12 smaller pieces as they are filling.
  • Store bars wrapped individually in the fridge for up to 7 days or freeze for up to 3 months.
