Ingredients

  • 1 cup old fashioned oats (see notes)
  • 1 cup water
  • 1 cup whole milk
  • ¼ teaspoon salt
  • ⅓ cup jaggery (see notes)
  • ½ cup blueberries
  • ¼ cup chopped walnuts

Instructions

  1. Add the oats, water, milk, and salt to a saucepan and cook on high heat until the mixture bubbles.
  2. Turn the heat to low, cover, and cook for 5 minutes. (see notes)
  3. Turn the heat off, mix in the jaggery, cover and let the oatmeal sit for 5 minutes.
  4. Serve with the blueberries and walnuts.

Notes

  • The oats: Do not use quick-cooking or instant oats, as the resulting texture will be paste-like.

  • The Jaggery: Also known as shakkar, this is a South Asian unrefined cane sugar with a molasses-like flavor. If you have trouble sourcing it, the best alternative is dark brown sugar.
  • Cooking the oatmeal: Turn the stove off after 5 minutes to ensure a creamy texture.
