Ingredients

  • 2 tablespoons coconut oil
  • 2 egg organic, large
  • 1/2 cup pure maple syrup
  • 1/2 cup Greek yogurt nonfat plain
  • 3 banana medium, ripe, mashed
  • 1 1/4 cups whole-wheat flour
  • 1 1/4 cups rolled oats old-fashioned
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt sea salt
  • 1 teaspoon ground cinnamon
  • 1 cup walnuts optional, roughly chopped

  1. Heat oven to 350°F. Grease a 9x5-inch loaf pan with coconut oil. Line pan with parchment paper. Leave some paper hanging off the sides.
  2. Whisk eggs and maple syrup in a large mixing bowl until they're frothy and lighter in color. Stir in Greek yogurt and mashed bananas until combined.
  3. In a separate bowl, mix whole-wheat flour, 1 cup rolled oats, baking soda, sea salt, and cinnamon.
  4. Gently fold the dry ingredients into the wet mix. Add chopped walnuts, if using.
  5. Pour the batter into the loaf pan. Sprinkle 1/4 cup oats on top. Bake in the oven for 50-60 minutes. Cover the loaf with foil once it starts to brown to prevent the edges from becoming too dark.
  6. Remove from oven and cool the bread in the loaf pan on a wire rack for at least 10 minutes.
