Oatmeal Breakfast Bars
Oatmeal Breakfast Bars combine quick oats, applesauce, and almond milk with dried cranberries and chocolate chips for a chewy, mildly sweet snack. The use of flaxseed and coconut oil adds a subtle depth and moisture to the bars. Baking in a single dish keeps preparation simple and yields a set of grab-and-go bars suitable for a morning meal or snack.
Ingredients
- 3 cups quick oats
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- ½ teaspoon salt sea salt
- ½ cup applesauce unsweetened
- ½ cup almond milk unsweetened
- ⅓ cup maple syrup
- 2 Tablespoons Flaxseed ground
- 2 Tablespoons coconut oil melted
- 1 teaspoon vanilla extract
- ½ cup dried cranberries plus more for topping
- ½ cup chocolate chips plus more for topping
Instructions
- Preheat oven to 350°F and line a 8x8 baking dish with parchment paper or spray with cooking spray.
- Combine all ingredients except for the dried cranberries and chocolate chips in a large bowl.
- Once combined, fold in the dried cranberries and chocolate chips.
- Pour mixture into the prepared baking pan. Evenly spread batter in pan using a spatula and top with additional cranberries and chocolate chips.
- Bake for 30-35 minutes or until a toothpick inserted into the bars comes out clean.
- Remove from the oven, cool completely and then cut into 9 bars and enjoy.
