Ingredients

  • 1 banana mashed
  • ½ cup oats
  • ¼ teaspoon baking powder
  • ½ teaspoon cinnamon
  • 1 teaspoon maple syrup
  • ½ Tablespoon chia seeds
  • ½ Tablespoon almond butter
  • 8-10 blueberries

Instructions

  1. Preheat oven to 350F and line a baking sheet with parchment paper or a silicone mat.
  2. Mash the banana in a medium mixing bowl.
  3. Add all remaining ingredients, except for the blueberries into the mixing bowl and stir to combine.
  4. Add mixture to prepared baking sheet and form into a circular giant cookie.
  5. Gently push the blueberries into the top of the cookie.
  6. Bake for 16-18 minutes or until the top looks golden brown.
