Oatmeal Breakfast Cookie
Description
The Oatmeal Breakfast Cookie uses mashed banana to naturally sweeten and bind the ingredients together. Rolled oats provide the base and texture, while almond butter and chia seeds add some protein and healthy fats. Cinnamon adds flavor depth and warmth. Blueberries pressed into the cookie before baking add bursts of juicy fruit throughout.
Baking the batter into one large cookie simplifies portioning and cooking. The result is a slightly soft but baked-through cookie with a golden surface. This cookie is suitable for those seeking a portable, minimally processed breakfast with fruit and whole grains. It’s easy to make and can be warmed or packed to eat later.
