Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt sea salt
  • 2 banana mashed, ripe
  • 1 1/2 cups milk
  • 1 egg large
  • 1/4 cup maple syrup
  • 1 cup blueberries chopped, mixed berries like
  • 1 cup strawberries
  • 1 cup raspberries

Instructions

  1. Preheat oven to 375°F and line a muffin pan with paper liners or grease with nonstick spray.
  2. In a large bowl, combine oats, baking powder, cinnamon, and salt. In another bowl, whisk together mashed bananas, milk, egg, and maple syrup. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the berries.
  3. Divide the mixture evenly among the prepared muffin cups, filling each about 3/4 full. Bake for 25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
