Ingredients

  • 1/2 cup unsalted butter
  • 1 cup packed light brown sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups old-fashioned rolled oats

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium saucepan, melt the butter and brown sugar over medium heat until smooth. Remove from heat.
  3. Stir in flour, salt, and vanilla extract. Let the mixture cool slightly.
  4. Beat in the egg, then fold in the rolled oats until well combined.
  5. Drop teaspoonfuls of the mixture onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.
  6. Bake for 8-10 minutes, or until the edges are golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
