Oatmeal Packet Pancakes

Oatmeal Packet Pancakes combine instant oatmeal with basic baking ingredients to create fluffy pancakes with a slightly hearty texture. The use of baking powder provides lift, making these pancakes soft and airy, while the oatmeal adds a subtle earthiness and whole grain touch. This recipe is practical for using single-serving oatmeal packets and yields a small batch suitable for a quick breakfast or snack. Cooking on medium heat allows the pancakes to develop gentle browning with bubbles forming on the surface as a sign to flip, ensuring an even cook through.

Description

Oatmeal Packet Pancakes use one packet of instant oatmeal mixed into a batter with flour, egg, milk, sugar, and baking powder. The baking powder causes the batter to foam slightly before cooking, which helps produce fluffy pancakes. Cooking occurs on a non-stick surface over medium heat, where batter portions bubble and edges brown before flipping. This method results in pancakes that balance the soft crumb from flour and egg with the slight chewiness and texture from the oatmeal. The recipe yields around two large or three medium pancakes, making it manageable for small servings.

The pancakes work well with a variety of toppings like syrup, fruit, or butter according to personal preference. The oatmeal gives a modest nutty flavor and texture contrast compared to standard pancakes. The ingredient list is straightforward and requires no uncommon items.

This recipe is beneficial when you want to incorporate oatmeal into pancakes conveniently, using the instant oatmeal packets that add fiber and slight wholesome character without requiring separate preparation.

Ingredients

  • 1 instant oatmeal Quaker® Organic brand, packet
  • 1/4 cup flour
  • 1 egg
  • 1/4 cup milk
  • 1 tsp sugar
  • 1 tsp baking powder not baking soda

Instructions

  1. In a bowl, combine Quaker® Organic Instant Oatmeal packet, flour, egg, milk, sugar and baking powder. Stir to combine, but do not over mix. Mixture may appear to "foam" a bit, from the baking powder. This is what helps make your pancakes fluffy.
  2. Spray a griddle or pan with non-stick cooking spray, then place a skillet or pan on medium heat. Scoop pancake batter (I like using an ice cream scoop) into pan. You can make two large size pancakes or three medium size pancakes. Cook until edges start to brown and bubbles form. Flip to cook on other side. Remove from pan, repeat with remaining batter and serve with toppings of your choice.
