Oil-Free Potato Tacos with Avocado Lime Sauce

Ingredients

For the Tacos
  • 3 Cups fingerling potatoes cubed
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • 1 lemon Juiced
  • 1 teaspoon oregano
  • 6 tortillas
  • 2 tomatoes Cubed
  • 1 lime Juiced
For the Avocado Lime Sauce
  • 1 avocado
  • ¼ cup plain unsweetened almond yogurt
  • 3 tablespoon lime juice
  • 1 tablespoon cilantro leaves
  • 1 clove garlic
  • Ground sea salt to taste
  • Romaine leaves for garnish
  • Sliced jalapenos if you want a spicy taco

Instructions

For the Tacos
    Cup of Yum
  1. Soak the tomatoes in the lime juice
  2. Preheat oven to 425°F (218°C)
  3. Toss the potatoes in the sea salt, black pepper, paprika, oregano, and lemon juice
  4. Place on a parchment lined baking sheet
  5. Bake for 8 to 10 minutes, then toss the potatoes and bake again for 8 to 10 minutes, or until nicely browned and crispy.
  6. Make the avocado sauce
For the Avocado Lime Sauce
  1. Remove the pit from the avocado and scoop the flesh into a blender. Add the yogurt, lime juice, cilantro, garlic and sea salt and blend on a high speed until it’s smooth and creamy, approximately 1 minute. Eat immediately (see note).

Notes

  • This sauce is best when eaten the same day that it's made. Because it's made with avocado it will turn brown the longer it's stored.
