Ingredients

Cake:
  • 2 cups flour
  • 2 teaspoons baking soda
  • 15.25 ounces fruit cocktail in heavy syrup
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
Frosting:
  • 12 ounces evaporated milk
  • 1 ½ cups sugar
  • ½ cup unsalted butter
  • 1 teaspoon vanilla extract
  • 14 ounces sweetened shredded coconut
  • 1 cup pecans , chopped
  • Maraschino cherries , for garnish
  • Whipped Cream , for garnish

Instructions

Make the cake:

  1. Preheat the oven to 350°F. Spray a 9x13 pan with nonstick spray.
  2. In a mixing bowl, add the flour, baking soda, sugar, eggs, vanilla, and fruit cocktail with the syrup.
  3. Combine and pour into the prepared baking pan.
  4. Bake for 35 minutes or until a toothpick inserted into the center comes out clean.
  5. Remove from the oven and set aside to cool.
Prepare the frosting:
  1. In a medium saucepan, combine the evaporated milk, sugar, butter, and vanilla.
  2. Over medium heat, melt the butter and heat until the sugar has dissolved.
  3. Stir in the coconut and pecans. Bring to a boil for 1 - 2 minutes.
  4. Remove from the heat.
  5. With a large handled spoon, use the handle to poke holes in the cake.
  6. Gently pour the hot frosting over the cake.
  7. Spread the frosting into an even layer.
  8. Allow the cake to cool. Cut and serve. Top with whipped cream and a maraschino cherry.
