Ingredients
- 3 1/2 cups all purpose flour
- 1 cup canola oil
- 2 cups granulated sugar
- 2 cups fresh grated zucchini
- 3 large eggs
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon freshly grated nutmeg
- 1 teaspoon ground cinnamon
- 2 1/2 cups raisins

Instructions
- Preheat the oven to 350°F (175°C), and grease and flour two 8X5 inch loaf pans.
- In a large bowl mix together the oil, sugar, and salt.
- Add the grated zucchini, followed by the eggs.
- In a separate bowl, sift the flour, cinnamon, nutmeg, baking soda, and baking powder, then add the flour mixture to the zucchini mixture and mix together until a thick batter developed. Add the raisins and mix to combine.
- Divide the zucchini batter in half and pour it into the greased loaf pans.
- Place into the oven and bake for 55-60 minutes or until the toothpick comes out clean.
- Once baked remove the zucchini bread from the oven, then turn it over to release it from the baking pan.
- Cool the zucchini loaves with the crown facing upward on a cooling rack for about 30 minutes.
