Olive Garden Tiramisu

Olive Garden Tiramisu is made using sponge cake layers soaked in a coffee and brandy mixture, layered with a sweetened cream cheese filling and topped with cocoa powder. This version uses cream cheese in place of the traditional mascarpone, creating a spreadable texture that holds the cake together. The cake is assembled and chilled before serving, allowing the flavors to meld without making the cake overly soggy.

Ingredients

  • 1 sponge cake (10 to 12" and about 3" tall)
  • 3 ounces coffee strong, black
  • 3 ounces brandy or rum
  • 1 1/2 pounds cream cheese
  • 1 1/2 cups superfine sugar
  • cocoa powder for sprinkling on top

Instructions

    Cup of Yum
  1. Cut across middle of sponge cake, forming two layers, each about 1 and 1/2 inches thick.
  2. Blend coffee and brandy. Sprinkle enough mixture over the bottom half of the cake to flavor it strongly. Don't moisten the cake too much or it may collapse.
  3. Beat room temperature cheese and 1 cup sugar until sugar is completely dissolved and cheese is light and spreadable. Test for sweetness during the beating, adding more sugar if needed.
  4. On the cut surface of the bottom layer, spread half of the cheese mixture.
  5. Place the second layer on top.
  6. Spread the remaining cheese mixture on top.
  7. Sprinkle top with sifted cocoa.
  8. Refrigerate the cake for at least two hours before cutting and serving.

Notes

  • Substitute cream cheese for mascarpone for a spreadable texture and slight tanginess.
  • Use rum as an alternative to brandy if preferred.
  • Refrigerate the tiramisu for at least two hours to allow flavors to meld and texture to firm up.
  • Let the tiramisu sit at room temperature for about 20 minutes before serving to soften the texture.
  • For extended freshness, consume within two days to avoid the cake becoming too mushy.
  • Before serving, consider adding an additional dusting of cocoa powder for enhanced appearance and flavor.
