Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 Tablespoons sugar
  • 1 3/4 cup buttermilk
  • 2 large eggs
  • 1 large egg white
  • 6 Tablespoons butter (barely melted)
  • 2 Tablespoons oil (canola or vegetable)
  • 1-2 teaspoons vanilla

Instructions

    Cup of Yum
  1. In a large bowl, add flour, baking powder, baking soda, salt, and sugar.
  2. Stir in buttermilk, eggs, egg white, melted butter, oil, and vanilla. Fold together until mixed well.
  3. Heat waffle iron until ready.  Spray with non-stick cooking spray or coat with butter. Pour waffle batter into waffle iron and bake until golden.
  4. Remove from waffle maker and place on cooling rack to allow the steam to escape, if not eating right away.
  5. Top with butter, maple syrup, homemade whipped cream, and fresh fruit.

Notes

  • If you don't have buttermilk on hand, use whole or 2% milk mixed with 2 Tablespoons of vinegar. Set aside for at least 10-15 minutes to start the thickening process.
