One-Bowl Vegan Oatmeal Raisin Cookies
These One-Bowl Vegan Oatmeal Raisin Cookies combine quick oats, flour, and raisins in a dough made with melted coconut oil and almond milk. Baking yields soft, golden-brown cookies with a tender texture. Ingredients
- ¼ cup coconut oil melted, or substitute vegan butter
- ⅓ cup brown sugar
- ½ tsp vanilla extract
- 2 tbsp almond milk
- ¾ cup quick oats
- 1 cup all-purpose flour or gluten-free baking flour
- ½ tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp salt
- ½ cup raisins
Instructions
- Preheat the oven to 350F (180C), and line a baking tray with parchment paper.
- In a medium bowl, add the melted coconut oil, brown sugar, vanilla, and almond milk. Mix with a wooden spoon.
- Add the oats, flour, baking soda, cinnamon, salt, and raisins into the same bowl and mix it all together to form a cookie dough.
- Roll the dough into 12 balls and place onto the parchment lined baking tray. Press each ball a bit with a wooden spoon to help them spread. Bake for 10-12 minutes.
- When you remove the cookies, they will be golden brown, but will still be very soft, which is normal. Allow them to cool on the baking tray and firm up before serving.
Notes
- Store cookies in an airtight container to keep them soft for up to four days.
- Melted coconut oil or vegan butter can be used to achieve a tender texture.
