One-Bowl Vegan Oatmeal Raisin Cookies
Description
The recipe uses common baking ingredients combined in one bowl, including coconut oil, brown sugar, vanilla, almond milk, quick oats, all-purpose flour, baking soda, cinnamon, salt, and raisins. After mixing wet ingredients, the dry ingredients and raisins are incorporated to form dough balls. These are baked at 350°F until golden, about 10-12 minutes. The cookies remain soft initially but firm as they cool on the baking tray.
Texturally, these cookies feature a chewy center from oats and plump raisins with a mild cinnamon flavor. They hold their shape well due to the baking soda and have a subtle sweetness balanced by the brown sugar and vanilla. The recipe avoids eggs or dairy, relying on plant-based milk and fats.
Once baked and cooled, they are ready to serve as a snack or light dessert. They keep well when stored properly, maintaining moisture for several days.
Storing these cookies in an airtight container for up to four days helps preserve their softness. Using coconut oil or vegan butter can adjust the richness and flavor slightly.
Ingredients
- ¼ cup coconut oil melted, or substitute vegan butter
- ⅓ cup brown sugar
- ½ tsp vanilla extract
- 2 tbsp almond milk
- ¾ cup quick oats
- 1 cup all-purpose flour or gluten-free baking flour
- ½ tsp baking soda
- ½ tsp ground cinnamon
- ¼ tsp salt
- ½ cup raisins
Instructions
- Preheat the oven to 350F (180C), and line a baking tray with parchment paper.
- In a medium bowl, add the melted coconut oil, brown sugar, vanilla, and almond milk. Mix with a wooden spoon.
- Add the oats, flour, baking soda, cinnamon, salt, and raisins into the same bowl and mix it all together to form a cookie dough.
- Roll the dough into 12 balls and place onto the parchment lined baking tray. Press each ball a bit with a wooden spoon to help them spread. Bake for 10-12 minutes.
- When you remove the cookies, they will be golden brown, but will still be very soft, which is normal. Allow them to cool on the baking tray and firm up before serving.
Notes
- Store cookies in an airtight container to keep them soft for up to four days.
- Melted coconut oil or vegan butter can be used to achieve a tender texture.
- Press dough balls gently before baking to help cookies spread evenly.
- Allow cookies to cool on the baking tray to firm up properly after baking.
