One Minute Brown Rice Risotto
This One Minute Brown Rice Risotto uses Minute® Ready to Serve brown rice combined with heavy cream, Parmesan cheese, peas, garlic, and lemon zest to quickly create a creamy, subtle risotto flavor. It's designed for a fast meal with simple ingredients that combine creamy and fresh notes, making it convenient for quick lunches or light dinners.
Ingredients
- 1 cup brown rice Minute® Ready to Serve brand
- 2 tablespoons heavy cream (half and half would be OK)
- 2-3 tablespoons Parmesan Cheese
- 2 tablespoons pea
- 1 teaspoon garlic chopped
- 1/2 teaspoon lemon zest
- 1 teaspoon lemon juice
Instructions
- Stir all the ingredients together carefully and microwave for one minute.
- If you are taking this on the go, pack the heavy cream, Parmesan, peas and garlic in a small covered container and refrigerate until needed.
- Add in to the cup just before microwaving.
