One Pan Chicken Alfredo

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tbsp avocado oil
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dried basil
  • 1 tsp dried parsley
  • 1/4 cup butter
  • 1 cup heavy cream
  • 1 1/2 cups grated Parmesan cheese

Instructions

  1. Pound chicken breasts to half thickness with a meat tenderizer. Combine salt, pepper, basil and parsley in a small bowl and season chicken on all sides.
  2. Heat avocado oil over medium heat in a frying pan. Sear chicken in the pan for 5 minutes on each side. Remove chicken from the pan and set on a plate.
  3. Melt butter in the hot pan over medium-low. Pour in heavy cream and mix around to get the leftover seasons from the chicken. Simmer for 5 minutes stirring frequently.
  4. Reduce heat to low and slowly mix in grated parmesan cheese. Once all cheese is melted, place chicken back in the pan. Toss to coat the chicken in the saute and saute for another minute. Serve with noodles, zucchini noodles or roasted veggies
