One Pan Roasted Peppers, Onions, & Sausages
This recipe features roasted bell peppers and onions combined with pre-cooked chicken and apple sausage pieces, all baked in a single pan at high heat. The vegetables become caramelized and tender while sausages warm through, creating a balanced mix of savory, sweet, and aromatic flavors enhanced by garlic and Italian seasoning. This makes a convenient and hearty dish suitable for serving over zucchini noodles or pasta with marinara sauce for an easy dinner option.
Ingredients
- 2 onion large
- 3-4 yellow orange, or red bell peppers
- 2-3 Tablespoons olive oil
- 2 garlic minced, cloves
- 2 teaspoons Italian seasoning
- salt to taste
- black pepper to taste
- 4 chicken and apple sausage chopped into bite-size pieces, Aidell's brand
Instructions
- Heat oven to 450 degrees. Line a cookie sheet with parchment paper.
- Chop the onions and peppers in even, bite-sized chunks. Drizzle with olive oil and toss to coat, then add garlic, salt & pepper, and sprinkle with seasoning. Toss again to coat everything evenly, then spread around the cookie sheet in an even layer.
- Roast the onions & peppers for 15 minutes in the oven, then remove and add the pre-cooked Aidell's sausage chunks around the pan. Return the pan to the oven for an additional 15 minutes, or until the vegetables begin to look roasted and caramelized around the edges.
- Serve with zucchini noodles or pasta and your favorite marinara sauce.
Notes
- You may substitute uncooked Italian sausage; if doing so, add the sausage at the beginning and roast for the full 30 minutes until fully cooked and vegetables are roasted.
