One Pot 20 Minute Greek Pasta mixes whole wheat pasta with black olives, artichokes, tomatoes, and herbs, cooking everything together in a single pot. The addition of feta cheese at the end adds a creamy, salty finish. This quick meal captures Mediterranean flavors with minimal cleanup, serving as a light but satisfying vegetarian option.
Ingredients
- 12 oz whole wheat pasta
- 6 oz black olives drained, sliced
- 13.5 oz artichokes drained, quartered, canned
- 2 large Roma tomato diced
- 1 oz diced tomatoes drained, canned
- 2 teaspoons kosher salt
- 1/2 teaspoon black pepper ground
- 1 tablespoon parsley fresh, plus to garnish
- 1 teaspoon oregano dried
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 4 1/2 cups water
- 1 1/2 - 2 cups feta cheese seasoned or unseasoned
Instructions
- Add all ingredients, except feta cheese, to a large (at least 5 quart) pot and bring to a boil.
- Once boiling, stir often with tongs to prevent pasta from sticking until pasta is cooked al dente and most of the liquid is gone. About 8-9 minutes.
- Remove from heat and then add feta cheese and garnish with a litlte more parsley and serve!
Notes
- Regular spaghetti or linguine can be substituted if preferred instead of whole wheat pasta.
- You can customize by adding other favorite vegetables to the pot for variety.
