Description
This Greek pasta recipe combines whole wheat pasta, drained black olives, quartered artichokes, diced Roma tomatoes, canned diced tomatoes, and seasonings including kosher salt, black pepper, parsley, oregano, and garlic powder in a large pot. Olive oil and water help cook the pasta while blending the flavors. The mixture is brought to a boil and stirred frequently to prevent sticking, cooking until the pasta is al dente and most liquid evaporates, about 8 to 9 minutes.
Feta cheese is stirred in after cooking, melting slightly into the pasta for added moisture and seasoning. The texture balances tender pasta with the briny elements from olives and artichokes, alongside fresh herb aromas. The dish is garnished with additional parsley for brightness.

Ingredients
- 12 oz whole wheat pasta
- 6 oz black olives drained, sliced
- 13.5 oz artichokes drained, quartered, canned
- 2 large Roma tomato diced
- 1 oz diced tomatoes drained, canned
- 2 teaspoons kosher salt
- 1/2 teaspoon black pepper ground
- 1 tablespoon parsley fresh, plus to garnish
- 1 teaspoon oregano dried
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 4 1/2 cups water
- 1 1/2 - 2 cups feta cheese seasoned or unseasoned
Instructions
- Add all ingredients, except feta cheese, to a large (at least 5 quart) pot and bring to a boil.
- Once boiling, stir often with tongs to prevent pasta from sticking until pasta is cooked al dente and most of the liquid is gone. About 8-9 minutes.
- Remove from heat and then add feta cheese and garnish with a litlte more parsley and serve!
Notes
- Regular spaghetti or linguine can be substituted if preferred instead of whole wheat pasta.
- You can customize by adding other favorite vegetables to the pot for variety.
