The mixture is brought to a boil and stirred frequently to prevent sticking, cooking until the pasta is al dente and most liquid evaporates, about 8 to 9 minutes.

  • 12 oz whole wheat pasta
  • 6 oz black olives drained, sliced
  • 13.5 oz artichokes drained, quartered, canned
  • 2 large Roma tomato diced
  • 1 oz diced tomatoes drained, canned
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper ground
  • 1 tablespoon parsley fresh, plus to garnish
  • 1 teaspoon oregano dried
  • 1/2 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 4 1/2 cups water
  • 1 1/2 - 2 cups feta cheese seasoned or unseasoned

Instructions

  1. Add all ingredients, except feta cheese, to a large (at least 5 quart) pot and bring to a boil.
  2. Once boiling, stir often with tongs to prevent pasta from sticking until pasta is cooked al dente and most of the liquid is gone. About 8-9 minutes.
  3. Remove from heat and then add feta cheese and garnish with a litlte more parsley and serve!

  • Regular spaghetti or linguine can be substituted if preferred instead of whole wheat pasta.
